To get started, first you will want to wash and scrub your fresh mussels, then you will want to remove their beards. Next take out a saucepan, and heat up your extra virgin olive oil. Moving along, next saute your minced garlic and green spring onions for roughly two minutes. Next add in the mussels, and then pour your Corona light beer over the top of them. Stir the mixture, then place a lid over your saucepan and let your mussels cook until they open up. If you notice that some of the mussels do not open up, then simply discard those. For the next step, sprinkle the mussels with the coarse ground black pepper and the fresh chopped parsley. This delicious seafood dish is now ready to serve.
